I really shouldn’t blog about food; I always forget to take prep photos, I have uncute dishes, and I’m horrible at plating. However, when my husband takes a whiff of one of my creations and enthusiastically says, “Ooooh, I want to dive in there!!” I can’t help but think other people might want this recipe, too.

I N G R E D I E N T S

8 bacon strips, diced
1 large celery stalk, diced
1 small onion, diced
2 cloves of garlic, minced
2 large red potatoes (skin on), diced
1 cup chicken broth
1 cup or 1 can of corn niblets
1 cup milk
1/4 cup of cream cheese
1/2 cup of shredded cheese (reserved for topping)
a dash of Frank’s or your favorite hot sauce
salt & pepper to taste

The recipe I adapted this from used a one-pot method, but I always encounter problems when trying to fry up bacon in a pot; so use the cooking tools you’re most comfortable with. Cook your bacon pieces over medium heat until nearly crispy (Did cut your meat with scissors?? Fun!!) then toss in your celery, garlic, and onion until your onion starts to go clear. Quickly drain this and toss it into a pot; I say quickly because a little grease will add to the flavor, obvs. I might even have taken my cup of chicken broth, swished it in the used pan and then used it for the next step. Yeah, I did. Add potato and broth to the pot along with your dry spices. Cover and simmer for 20 minutes or until potato is tender. Take a masher or a fork, whatever you have, and push down and smash those potatoes; you want to leave big chunks, just loosen it all up a bit. Stir in remaining ingredients and heat through, being careful not to scorch or boil. Top with shredded cheese and if you thought to reserve a few crumbles of bacon for an excellent plating presentation, you’ve done better than me.
When deciding how much to make, just think about how many of those potatoes you would want for a meal. This was enough for one generous serving for my hubs and I, no leftovers. This recipe that I adapted mine from can help you convert the ingredient portions if you want to make it larger. Dudes, trust me, you’re gonna want leftovers.
